How do I play my iTunes library with this device?

After you set up this device and connect it to your wireless network successfully.

You can play the music in iTunes library of your iPhone with WiiM Home app by selecting Browse tab -> My Music -> iPhone.
You can use Apple Music to cast your music from iTunes library to WiiM Mini via Airplay.
